S: What is your role here at the Swan?
M: Day to day, opening the bar but there is a lot of purchasing work to be done, like choosing which suppliers we’d like to work with.
S: What is it you love about the working here at the Swan?
M: It’s all about the people, it sounds cliché but both the staff and guests we have here are fantastic. I really enjoy the friendly, familiar faces and it makes me proud when I come in to work.
S: What’s your favourite dish on the menu?
M: On the bar menu, the burgers and the fish and chips are by far the most popular here and it’s for good reason. The new steak and ale pie that’s coming on the menu for Winter is amazing, keep an eye out for that one!
S: What was the last place you ate out?
M: It was the ‘Boundary’ in Shoreditch, near Redchurch St. It was good but it was no ‘Goodman’, that’s my favourite place to get a good steak in London.
S: Who would be your ideal dinner party guest?
M: Muhammad Ali. I love my boxing, I like to read about him and I love the way he carried himself as an Orator.
S: Describe the Swan in one word?
M: Controlled Chaos. I know it’s not one word but still.
