S: What is your role here at the Swan?
D: As Executive Chef, I don’t have a typical day or set routine. My days seem to involve running up and down flights of stairs, finding out what is going on and putting out fires here and there.

S: What is it you love about the working here at the Swan?
D: The people here at the Swan have always been great. Having the theatre next door and looking out across the river, or walking to work in the summer along South Bank makes it all worthwhile.

S: What’s your favourite dish on the menu?
D: Every single one of them! Personally, the baked crab is good fun. It’s basically crab and chips and it’s really good, English fun in a brilliant dish.

S: What’s your favourite dish to cook at home?
D: I cook at home all the time. I make all sorts of stuff. I have lots of jars of grains, pulses and I like to experiment. Just last night I made Prawn Jambalaya, just for the hell of it.

S: What’s your secret hangover cure?
D: A can of Coke and a double sausage & egg McMuffin. The Doctor in the red jacket never fails! The key is in the can of Coke though.

S: Who would be your ideal dinner party guest?
D: Stephen Fry. He’s a wonderful man.

S: Describe the Swan in one word?
D: Glamorous.
