S: Describe a typical day for you at Swan…
B: Cook, swear, chop, argue, sweat, swear, argue, cook, swear, fight, order, swear, cook, work…….. Beer.
S: What’s your favourite dish on the Swan menu?
B: The chicken schnizel focaccia sandwich from the Foyer Café Bar.
S: Where was the last place (other than Swan) you ate out?
B: Brockley market, Mother flipper burgers.
S: What’s the dish you book most often at home and why?
B: Pitta with salad and BBQ’d meat with it. I change it up with different spices.
S: What is your best hangover cure?
B: The Swan kitchen….
S: If you were a Shakespearean Character, who would you be and why?
B: Caliban from the Tempest, otherwise described as “the Beast Man”.
