A good plate of food starts with good ingredients, and we get the best British ingredients we can lay our hands on from our select farmers, fishmongers, butchers and brewers. Our cooking is inspired by the seasons and our menus are driven by the produce that comes through our doors each day.

Our vegetables and salads

When it comes to fruit and veg, Ted Dawson knows his apples from his oranges. With four generations of farming expertise and a commitment to chemical-free produce, the knowledge of this family-owned greengrocers runs deeper than the roots of any carrot. You can find Ted’s stand brimming with the freshest fruits and vegetables in Borough Market too, where they trade six days a week.

Our fish and seafood

The fish on our menus come exclusively from UK waters, from fishermen who are committed to sustainability and cleaner, thriving oceans. From day-boat catches to hand-dived shellfish, the fishermen we work with monitor quotas and observe seasonal and real time closures to help maintain fish stocks. What is more, they are MSC compliant and part of the responsible fishing and fishing for litter schemes too.

Our meat

Our beef, pork, lamb and chicken comes from Cumbria and supports family-run fells and smallholdings in the Lake District. With high welfare standards and health coming before profit, animals can wander freely in their natural environments where rural farmers rear native rare breeds, conserving their hugely important heritage. We believe their meat is second to none.

Our eggs

It would take someone stronger than us to resist the deep orange yolk of a Clarence Court egg. From Old Cotswold Legbars to Burford Browns, their traditional breed hens roam freely from dawn until dusk, laying eggs in their own time. We are proud to use their high-welfare eggs in everything from our breakfast to our baking.

Our charcuterie

It was love at first bite when we tasted Cobble Lane’s artisan charcuterie which has been cut, cured and matured here in London since 2013. Made with absolute passion in small batches from high-welfare British meats and fresh spices, you can find their outstanding products on our bar and snack menus.
